DAY 88: Bull Corn

Sorry to upset, but this post is not about bull.  It is about corn though.  I was ready my daily Zone Diet email and it was about corn, and the Zone Diet’s view of the yellow vegetable.  Corn is considered an “unfavorable carb… because it has a fairly high glycemic load.”  I do not fully understand this statement, but I believe that it means to stay away from this vegetable.

This reminded me of when I was growing up, and how much of a staple corn was in my diet.  It was my favorite vegetable, because of the taste and versatility in dish complement.  I used to eat corn on the cob, by itself, with pizza, mashed potatoes, gravy, and the list goes on.  When I got to college I learned that there was little nutritional value in this great vegetable.  I slowly cut back until present, where it is no longer a staple, but a random vegetable I eat when served to me.  It is funny how diets, taste and choice mold our eating habits.  Now I guess the most of corn I see, is a garnish on salads, which by the way is a suggestion of the Zone Diet.
