DAY 97: Only for Martini's?

I was reading a Zone Diet daily email about olive oil based dressings today, and I had never thought of making my own dressings.  After reading the ingredients, it does look a bit daunting, but I am going to try it out.  I will probably leave some of the ingredients out and change some as well, but I will stick to the recipe as much as I can.  I tend to like the lighter dressings, so I believe a dressing that uses vinegar and olive oil as the base will be to my liking. I might try adding some bleu cheese crumbles to later batches if I like the original one.
Till now, I have only cooked with olive oil.  It is healthier than butter and adds a great taste to anything it touches.  It also makes cooking in a pan so much easier.  Sautéing vegetables in olive oil give them a new taste that is unbelievable.
To my surprise, I look back and find a previous email from the Zoned Diet that references tuna as a great salad topper.  I learned that you should buy tuna packed in water instead of oil.  This oil is not healthy for you, I already know, but it is good to have some solid backing.  The great thing about this email though is that it gives me a great idea for a salad, as well as a chance to try my new dressing out.
